Fruit Fool
64Cheap healthy dessert.
As the price of food is rising, I'm rummaging through old family recipes that are not going to cost a fortune and still contain something healthy for us. Having children of my own this dessert is a good way of discussing fruit and honey. It can also be made with canned fruit.
I always keep a few tins canned in fruit juice, not syrup, in my larder.
Fruit Fool.
This is a cheap low fat moose that taste really yummy!
Adding the local honey helps to build up local pollen immunity; especially if taken regularly.
250g of soft fruit or drain a tin of Apricots (canned in juice) and put onto a blender with 1 teaspoon of locally harvested honey, then puree.
Stiffly whip 1/2 pint of double cream and fold into the puree.
Pour into glasses, chill.
Decorate as foolishly as you like if eaten on 1st April!
Strawberries, Blueberries, Raspberries and Peach's work fine too, as would any other soft fruit grown local to you.
Another 'less fattening' version of this is,
Liquidize fruit and honey
Make up or use a low fat packet of custard, to 1/2 a pint; use skimmed milk or follow instant packet instructions.
Add to the blender.
Then a jelly mix made up again to only 1/2 a pint.
Add to blender, purée all together and put in fridge to set.
Eat and enjoy!
